Oaxacan cuisine is one of the great culinary traditions of the Americas, and learning to cook it from Jazmin β€” a proud OaxaqueΓ±a with a profound love for food and cultural heritage β€” is about as close to the source as you can get. This 3-hour cooking class in Puerto Escondido is part culinary lesson, part cultural immersion, and entirely delicious.

What to Expect

The class takes place at Jazmin's kitchen in Bacocho (Monday–Friday) or La Punta (Saturdays), with two time slots: 10:00 AM or 5:00 PM. Jazmin welcomes you with an introduction to the ingredients, explains the dishes you will prepare, and answers any questions before you get your hands dirty.

You prepare three traditional Oaxacan dishes from scratch β€” chopping vegetables, grinding spices, shaping masa, and learning the techniques that have been passed down through generations. Jazmin teaches with warmth and expertise, sharing the history and traditions behind each dish. At the end, you sit down and eat everything you made, accompanied by flavored water (a traditional fruit-based drink), coffee or chocolate, and dessert.

Welcome and Introduction

Arrive at Jazmin's kitchen. She introduces the fresh, locally sourced ingredients, gives an overview of the dishes, and answers questions.

Hands-On Cooking Begins

Start preparing ingredients: chopping vegetables, grinding spices, shaping masa dough, and learning traditional techniques. Jazmin guides you through every step with cultural context and personal stories.

Main Cooking

Prepare your three dishes from scratch. Depending on the menu, this includes making mole sauce, filling and wrapping tamales, frying tacos dorados, or assembling sopes and memelas. Everyone participates.

Sit Down and Eat

The best part: sit at the table and eat everything you made, accompanied by flavored water, coffee or chocolate, and dessert. Share conversation about food, family, and Oaxacan traditions.

Good to Know

Transportation is NOT included;
you need to make your own way to the kitchen in Bacocho (Monday–Friday) or La Punta (Saturdays). Both are easy to reach by taxi from anywhere in Puerto Escondido.
Two time slots:
10:00 AM or 5:00 PM; the class lasts 3 hours. Morning class runs 10:00 AM to 1:00 PM, evening class runs 5:00 PM to 8:00 PM.
No cooking experience needed;
Jazmin teaches from the basics. The class welcomes complete beginners and experienced cooks equally β€” everyone participates hands-on.
Dietary restrictions can be accommodated;
vegetarian options are available (Menu 2). Please inform us of any allergies or dietary needs when booking so we can prepare accordingly.
Four menu options available;
choose your preferred menu when booking. Menus include sopes, enmoladas, tacos dorados, quesadillas with squash blossoms, tamales, pozole, and more.
Small group sizes;
classes are kept small for a personalized experience with plenty of one-on-one time with Jazmin. Book early as spots fill up.
You will eat a full meal;
come hungry β€” the class ends with a generous meal of everything you prepared, plus flavored water, coffee or chocolate, and dessert. No need to plan lunch or dinner afterwards.
